The Juiciest Sous Vide Thick Bone-In Pork Chops (Gluten-free, No Soy/Dairy/Grains)
The two keys to succulent pork chops instead of dry, chalky chops?... "Sous vide" and "On the bone"! For years, I thought I didn't like pork chops. Turned out, I just hadn't had them prepared correctly. Now, I can't get enough of that salty crust, that melty meat, and those extra-rich bites right up against the bone!
Like most of my sous vide meals, sous vide bone-in pork chops don't even need a recipe. Just season, sous vide, and sear! These extra thick chops were seasoned with rosemary, garlic, and umami powder, and then sous vide at 138 F for 2 hours. A quick flip-flip in a hot pan to give them a salty crust and onto the platter they went.
For the veggies, I sauteed sweet potatoes, mushrooms, and onions with rosemary, thyme, and dairy-free butter. I swear the house smelled like Thanksgiving! Actually, I think I like this dish better than stuffing. It's definitely easier! 😉
