Savory Curried Mashed Sweet Potatoes (Gluten-Free, no soy/dairy/grains)

Sweet potatoes are SO good for us. However, when thinking of using them for a 'soft' side, just the name conjures up all sorts of overly-sweet holiday dishes drenched in brown sugar and covered with whipped cream. That's fine for a bite or two, but then my palate gets overwhelmed and tired.
Enter Savory Curried Mashed Sweet Potatoes! The perfect balance of in-your-face flavor with creamy texture. I served these at a family get-together not knowing that all of us weren't normally sweet potato fans... and it was a HUGE hit! Did I mention that they are super easy?
Savory Curried Mashed Sweet Potatoes (Gluten-Free, no soy/dairy/grains)
INGREDIENTS:
5 large sweet potatoes, peeled and cut into large chunks
1 tsp turmeric
1 T graham masala
1/2 tsp curry powder
1/4 cup shallots, finely chopped
1 T chives, finely chopped (plus extra for garnish)
2 T honey
2 T butter or non-dairy butter substitute
salt and pepper to taste
DIRECTIONS:
Boil sweet potatoes until tender (about 15-20 minutes) and drain.
Return the sweet potatoes to the pot and place on the burner with the heat now turned off.
Mash the potatoes with a fork, masher, or hand mixer.
Add in the rest of the ingredients and mix thoroughly.
Transfer to a serving bowl and garnish with remaining chives.
