Quick Pickled Radishes (Gluten-free, soy-free, dairy-free)
This quick-pickled radish recipe makes amazing, tart pickled radishes with only about 10 minutes of prep! I love them on everything from salads, to tacos, slow cooked pork and more... pretty much any place you would use pickled red onions!
If you're someone who normally does not like radishes, you still need to give this a try! The pickling process totally changes the flavor and removes the normally bitter bite. Pickled radishes are sweet, tangy and a tad sour... like a pickled onion without the "onioniness" (new word, lol).
Thinly slice the radishes before adding them to the pickling liquid. You could use a mandolin for thin, even slices but I'm not that fancy. I just use a sharp knife.
I like to dice up the little portions near the stems that can't be sliced and save them for later. They make a quick, crunchy addition to salads or even as a raw snack.
Quick Pickled Radishes (Gluten-free, soy-free, dairy-free)
INGREDIENTS:
1 bunch of radishes (about 15-20 average size radishes)
1/2 cup apple cider vinegar
1 T sugar
1.5 tsp salt
1 cup warm or hot water
DIRECTIONS:
Thinly slice the radishes.
Place the sliced radishes in a mason jar or another air-tight container.
In a small bowl, combine the rest of the ingredients and stir until the sugar is dissolved.
Pour the liquid mixture over the radishes.
Seal the container and let the radishes marinate for an hour. Afterward, move them to the refrigerator where they will last for up to three weeks.
