Must-Try PERUVIAN GREEN SAUCE Aji Verde: Easy, Gluten-Free, & Dairy-Free!
Peruvian green sauce, also known as Aji Verde, is a zesty, vibrant, creamy blend of fresh cilantro, zesty lime, and fiery jalapeños.😍 So addictive that you'll stop politely spooning the sauce over each bite and just get right to dunking (so I've heard 🤭).
Peruvian Green Sauce often contains cheese and sour cream or Greek yogurt, but I made some tasty substitutions with avocado, mayo, and nutritional yeast to keep it dairy-free and still keto.🙃 I also traded half of the usual jalapeno with a big ol' dollop of aji Amarillo paste to give the flavor more depth (and heat)... and because I was too lazy to seed another jalapeno. 🤣
Lime juice adds a tangy brightness, cutting through the richness and enhancing the overall flavor profile. Garlic and a touch of salt round out the sauce, making it a well-balanced accompaniment.

INGREDIENTS:
1 cup chopped fresh Cilantro
1 Jalapeño Pepper, seeded and chopped
1 ripe Avocado peeled and seeded
Juice from 1 lime
2 Garlic cloves, peeled
1/4 cup of Water
2 T of Avocado Oil
2 T of Mayonnaise
2 tsp of Nutritional Yeast
1/2 tsp of Salt
1 T Aji Amarillo paste (more to taste)
DIRECTIONS:
✔️ Toss all ingredients in a blender, food processor, or immersion blender container and process until they are nicely blended and smooth.
