MISO CHICKEN CAESAR SALAD DIP (gluten-free, soy-free)
Mi-so in love with Miso Chicken Caesar Salad Dip (gluten-free, soy-free)! A fresh, inventive twist on the classic Caesar salad with exciting Asian flavors served as a crunchy, hearty, bright dip.
You have the usual romaine lettuce, chicken, and parmesan of a typical Caesar salad PLUS Thai chilis, crumbled fried rice paper (instead of croutons), and a shot of sriracha... all drizzled in soy-free SideDish Miso Caesar Salad Dressing and chopped until perfectly scoopable.
Serve this at your next picnic or party! It’s everything you love about game-day snacks but won't require letting out your waistband. Bold enough to stand out amidst all the wings, nachos, and pizza; however, it also has that comforting familiarity of a Caesar salad... but, it's a dip so even junk food-lovers will be a fan!
This dip is also totally scalable. Use one chicken breast for a single serving or debone an entire rotisserie chicken for a crowd. I like using Omaha Steaks chicken breasts because they are individually packaged so I can grab as many as I need from the freezer.
To make your own rice crisps, heat cooking oil to 380F. Gently place a spring roll wrapper into the oil. When the wrapper doubles in size and curls up (just a few seconds), remove it from the oil to a paper towel topped plate to drain. Salt the rice paper sheet and break into pieces.
MISO CHICKEN CAESAR SALAD DIP (gluten-free, soy-free)
INGREDIENTS:
1 head romaine lettuce
2 thin chicken breasts, cooked. (I marinate mine in the Miso Caesar Dressing overnight)
1 pepperoncini, stem and core removed.
1 Thai red chili, seeded and split in half.
1 Fried spring roll wrapper, crumbled (optional, but adds crunch)
1/2 cup grated parmesan, plus more for topping.
1/2 cup Miso Caesar Dressing, plus more to taste.
1 T sriracha, plus more to taste.
DIRECTIONS:
Pile all of the ingredients onto a large cutting board.
Chop into fine pieces until everything is evenly coated in dressing and mixed.
Add more cheese or dressing as desired.
Transfer to a serving dish and top with additional rice paper and parmesan.
Serve with rice crackers, chips or veggies and enjoy!
