Creamiest 4-Ingredient GARLICKY MASHED CAULIFLOWER (Gluten-free, low-carb, keto)

If you're craving a creamy, comforting side dish without the carb overload, low-carb mashed cauliflower is your new best friend. Imagine silky smooth cauliflower, perfectly steamed and mashed to buttery perfection, with a hint of garlic, a dash of butter, and a sprinkle of salt. The result? Creamiest 4-Ingredient MASHED CAULIFLOWER (Gluten-free)


Mashed cauliflower is a great way to sneak healthy veggies into the meals of carb-lovers. I've served this to several 'haters' and they didn't even know they were not eating potatoes... and, no, I did not tell them! ;)


Simply steam the cauliflower, add your seasonings, and mash!


HINT: Put the head of cauliflower without the core into a large zip-top bag and pound it with a mallet to break it up. You kitchen will stay nice and clean of cauliflower bits!

The cauliflower florets do not need to be equal sizes.



Steam the cauliflower until very tender. You cannot over-cook it. The softer, the better.

Add your butter, garlic powder, and salt. I like to use a pre-made garlic-herb butter for extra flavor.

Mash until it's as creamy as you like. I used an immersion blender, but you can use a hand masher, fork, or even a blender. Unlike starchy potatoes that turn gummy in a blender, cauliflower does not. Just be sure to add enough liquid so your blender doesn't clog.



4-INGREDIENT GARLICKY MASHED CAULIFLOWER (Gluten-free)



HINT: Make a double batch and freeze half (if there are any leftovers). I put the cooled mash into a zip-top bag, flatten it, and place it into the freezer. When you're ready to use it, run the sealed bag under a bit of warm water and peel the bag off of the frozen mash. That way, you don't lose any good bits in the bag. ;)

4-INGREDIENT GARLICKY MASHED CAULIFLOWER (Gluten-free)


INGREDIENTS:

  • 1 whole cauliflower, broken into florets

  • 1 T butter (or dairy-free butter substitute)

  • 1 tsp garlic powder

  • salt, to taste



DIRECTIONS:

  1. Steam the cauliflower until soft and transfer it to a large bowl.

  2. Add the butter, garlic powder, and salt to the cauliflower.

  3. Blend the mixture with an immersion blender, hand mixer, or potato masher until smooth.

  4. Taste and adjust seasoning as needed.


    So easy!!
