This bright-tasting baked salmon dish can be served as a main entre or appetizer and is equally as tasty eaten hot or room temperature. The fact that it's gluten-free, nut-free, egg-free and dairy-free makes it a perfect choice for guests or family members with specific food intolerances!

Season the salmon with salt.

The sweet and sticky pomegranate-orange sauce can be prepared ahead of time and simply warmed up right before glazing the salmon and baking.

CHRISTMAS SALMON WITH POMEGRANATE GLAZE (gluten-free, nut-free, dairy-free)


INGREDIENTS:

2 lbs. salmon (whole side or filets)

1 tsp kosher salt

8 oz pomegranate juice

¼ cup agave nectar (or honey)

¼ cup fresh-squeezed orange juice (~1 orange)

1 T orange zest

Pinch of chili flakes to taste (optional)

Pomegranate seeds for garnish (fresh or packaged)

Orange slices for garnish

Parsley for garnish

Green onions, sliced thinly for garnish



DIRECTIONS:

✔️ Preheat oven to 300° F.

✔️ Line a baking sheet with parchment paper.

✔️ Place salmon skin-side down on the baking sheet. Season with salt.

✔️ To a small saucepan over medium heat, add pomegranate juice, agave, orange juice, orange zest, and chili flakes.

✔️ Bring sauce to a boil. Then simmer, stirring occasionally, until it becomes thick and syrupy (~20 minutes).

✔️ Brush reduced pomegranate sauce over the salmon.

✔️ Place salmon in the oven and bake for 20 to 28 minutes (depending on the thickness of your salmon) until the meat just turns opaque.

✔️ Transfer salmon to a serving platter.

✔️ Garnish the top with pomegranate seeds, orange slices, fresh parsley, and sliced green onions.



NOTES:

1. The whole side of salmon can be swapped out for salmon filets.

2. Scallions add a nice crunch, but can easily be left off if they aren't your thing.

3. This glaze would also be wonderful on chicken or pork!

4. The chili flakes offset the sweetness of the sauce, but can definitely be omitted.
