Avocado Caesar Dressing (gluten-free, dairy-free, soy-free, grain-free, egg-free, AIP)

Avocado Caesar Dressing is so creamy and rich... without a hint of dairy or eggs! This dressing is the easiest thing in the world to make. Just blend the 7 ingredients with a few pulses of an immersion blender and you'll have ooey-gooey-garlicky goodness!

I used this Avocado Caesar Dressing on a perfectly-messy wedge salad. It would also make a great veggie dip, a topping for eggs... or just eat it with a spoon! No rules here (expect that everything has to be gluten and soy-free). lol Easily make it thicker or thinner by adjusting the little amount of water used.

INGREDIENTS:

  • 1 ripe avocado

  • 1 clove garlic

  • 3 T apple cider vinegar

  • 2 T nutritional yeast (this adds the cheesy flavor)

  • 1/4 cup avocado oil (olive oil will work, but it does have a stronger flavor)

  • 2 tsp water (adjust for thicker or thinner consistency)

  • Salt to taste

DIRECTIONS:

  • Combine all ingredients into a container that fits your immersion blender (or you can use a regular blender).

  • Blend until smooth.

  • Enjoy!
