Imagine a succulent rotisserie chicken with its golden-brown skin perfectly crisped and glistening with savory, caramelized goodness from earthy cumin, aromatic garlic, and a hint of tangy paprika... BUT you don't have a rotisserie.😢 No Problem!😉
Pop the bird into your Air Fryer and you'll be staring at poultry perfection in an hour or less (depending on how big your bird is).😎
I like to marinate the chicken overnight, but it's totally tasty if you simply rub the spicy, saucy mixture all over the bird right before roasting.
Here, I put a layer of baby potatoes underneath the bird in the air fryer basket (and more inside the cavity) to soak up those savory juices and then used the sauce left in the air fryer basket to make a pan-gravy that I poured over the taters.
Roast the chicken breast side down at 360 F for 45 minutes. Then flip to breast side up and cook for another 10-15 minutes until the chicken reaches an internal temperature of 165 degrees F.
The real magic happens with the Peruvian Green Sauce (Aji Verde)... Air-Fryer Whole PERUVIAN CHICKEN (dairy-free, gluten-free)
INGREDIENTS:
4-5 lb whole chicken, giblets removed
MARINADE:
3 T avocado oil
4 garlic cloves, minced
2 tsp paprika
1 T cumin
1 tsp dried oregano
2 T tamari
1 T honey or agave nectar
Juice from 1 lime
salt and pepper to taste
DIRECTIONS:
Blend marinade ingredients in a blender, food processor, or with an immersion blender until smooth.
Rub marinade all over chicken, including under the skin and on the inside. If time permits, let chicken marinate 6 hours to overnight.
Preheat air fryer to 360 degrees Fahrenheit.
Place chicken in air fryer, breast side down. Cook for 45 minutes.
While the chicken is cooking, prepare the Peruvian Green Sauce (Aji Verde).
Open air fryer basket, flip the bird, and cook for 10-15 more minutes.
(Your chicken is done when a quick read thermometer inserted into the thickest part of chicken registers 165 degrees F.)
Let chicken to rest for at least 5-10 minutes before digging in.
